Driving from Ljubljana to Celje, Trojane is a town where you have to stop. It is almost a pilgrimage centre for all the travelers just to buy freshly fried doughunts, to eat them warm or to take them home. The traditional doughnuts are filled with apricot jam, but nowdays we can buy them also with chocolate. In Trojane, between 2000 and 5000 doughnuts are deep fried and sold every day, but the number increases during the carnival time. It is a tradition to eat doughnuts during the carnival period and the Trojane doughnuts are far the best. But of course you can buy them in other shops as well. 🙂
Try to make them on your own:
Ingridients:
600 g white flour
1 tablespoon salt
5 egg yolks
80 g sugar
80 g raw butter
30 g yeast
2-3 dl milk
1 tablespoon rum
grated lemon zest
powdered sugar
1. Make sourdough from crumbled yeast mixed with 1 spoon of sugar and 2 spoons of milk. Dust with some flour.
2. Put flour in a bowl, make a small hole in the middle and pour in the sourdough. Cover up with a cloth and let rest for a few minutes.
3. Mix lukewarm milk, melted butter, egg yolks, sugar, salt, lemon zest and rum. Pour the mixture into the dough.
4. Knead into a smooth dough. Let rise for at least one hour in a warm chamber.
5. Dust the table with flour, roll out the dough (1.5 cm thick) and use the round mould (5 to 8 cm) to cut out the circles.
6. Cover the circles with a tablecloth and let rise another 30 min.
7. Heat the oil in a frying pan and plung the risen doughnuts upside down into the oil. After a couple of minutes, turn them around and fry until they are golden brown.
8. Take the doughnuts out and place them on a paper towel to absorb the extra fat.
9. Inject the apricot jam and sprinkle with powdered sugar.
